RAINBOW VEGGIE SALAD
Ingredients
- 1 head romaine lettuce, chopped
- 1 diced small red onion
- 1 sliced and halved small cucumber
- 1 cup shredded carrot
- 1 cup of halved cherry tomatoes
- 1 diced yellow bell pepper
- Dressing (Honey Mustard Vinaigrette)
- salt
- pepper
- 3 tablespoons olive oil
- 3 tablespoons mustard
- 3 tablespoons honey
- 3 tablespoons red wine
- 1 tablespoon dried oregano
- 2 minced garlic cloves
The steps
- Combine all of the vegetables in a large bowl.
- In a medium bowl, combine all the dressing ingredients and whisk together until it becomes thick.
- Pour the dressing on top of the salad.
- Serve and Enjoy!
