The potato omelet or "tortilla de patatas" is my favorite dish, almost nobody can say that it does not like.
It is easy to prepare, you only need potatoes, egg, onion and optionally parsley. I usually do it once a month, when a friend comes to dinner at home. What do you think? Have you tried it?

I live in Spain, and here it is a staple food :) Jamon, pan, tortilla and cafe con leche, the best way to start off your day!
