Banana pudding is my favorite summertime dessert. I made one to take to a cookout Sunday and everyone loved it, so I thought I would share the recipe.
It's not difficult, it just takes a little planning. The items you will need to purchase are as follows:
2 boxes Vanilla Wafers
2 boxes 5.1oz Banana Cream JellO pudding
16oz Cool Whip
4 ripe bananas
1 can Eagle Brand sweetened condensed milk
5 cups milk
Use a large mixing bowl. I use my wife's KitchenAid mixer because it has a large mixing bowl (and I hate hand wisking). Mix your 2 boxes of pudding mix and 5 cups of COLD milk till they are well mixed. Place the pudding in the refrigerator until the pudding sets up (approx. 5-8 minutes). Add the sweetened condensed milk to the budding and blend well. Next add the Cool Whip to the budding mix and blend well. The pudding should be very fluffy now and double the volume. Now slice your bananas in 1/4 in slices and you are ready to put the dessert together. In a large dish or trifle bowl, start layering as follows:
bottom layer vanilla wafers, then a thin layer of pudding
layer of sliced bananas, then a thin layer of pudding (cover the bananas completely so they do not brown)
Repeat the above layers until you run out of pudding or your dish is full.
Top with more wafers and you are done.
