A few weeks ago my friends and I tried a relatively new pizza place which opened in June 2017 called Trecento Woodfired Pizzeria & Bar in Manuka, Canberra. The place is small and cozy and the ambience is good. The service was friendly and efficient. We ordered 2 pizzas and a calamari plate to share. The photo above is diavola - san marzano tomato, parmesan, fior di latte, cacciatore (hot salami) + basil. The pizza was tasty but I still think D.O.C. Pizza in Melbourne is better.
calamari with chilli dust, house made citrus aioli
This starter was nice but the calamari was a bit salty for my taste. The rocket salad on the side was fresh and delicious.
According to co-owner Jon Kosteski, who went to Naples to learn the art of making pizza, "The pizza is based on a 300-year-old recipe. It's governed by the AVPN who are in Napoli, and pretty much [they have strict guidelines] on everything down to exact ingredients, the equipment you use, the temperature of the oven, the method, the cooking time, all that sort of thing" source
porcini - fior di latte, parmesan, porcini, champignon + basil
The mushrooms were full of flavour and the white sauce as the base was a good contrast to the tomato base ones I usually have.
All in all a good experience with nice conversation.
They are so tempting! I want to go and get them when I visit Canberra.
