Halloween is right around the corner and no one seems to give two cents about it here. Maybe it happens to be during the tough time of the greatest lost in centuries of all Thai people that we have marked losing the greatest King a year ago ; it's gloomy everywhere.
However, my only problem isn't about the party but it is that I had been craving for an old fashioned pumpkin pie for days and I couldn't find it anywhere in Bangkok!! I tried googling, went down to a few cafes and even supermarkets that supply imported food. NONE!! How come?? I even called up 2 branches of Dean & Deluca and they said their pumpkin pie only available on Christmas! Who eats pumpkin pie on Christmas?
Yes, your suggestion might be why can't I make one myself. The answer is that I don't have an oven at the rented place I stay but the craving was so bad that I got fed up and decided to give it a try with what I have anyway. So here it is my "Super DIY God Damn Pumpkin Pie"
Initially I dropped by at La Villa an Imported products supermarket which was my 5th stop yesterday to get my damn pie but no hope at all so I just took a basket and shoved a whole pumpkin and a baking tray in and left.
- Peel off the whole pumpkin and chop it into pieces then steam it, meanwhile we can start working on the pie crust.
:: Here are what you need for the pie crust ::
- All purpose flour 1+1/2 cup
- Chilled unsalted butter (diced) 85 grams
- Salt 1/2 teaspoon
- Iced water 4-5 tablespoons
- Uncooked rice or beans 500 grams *(to put on top of the pie crust while baking)*
:: Pumpkin Filling ::
- Steamed pumpkin 450 grams
- Whole milk 200 mL
- Sugar 2/3 cups
- Cinnamon powder 1/2 teaspoon
- Grated nutmeg 1/2 teaspoon
- Salt 1/2 teaspoon
- 3 Eggs
- Mix all purpose flour with salt and butter. (I have a very limited range of equipment in hand so most of the process are done DIY style). In this case; hands.
Put 4 spoons of iced water into the mixture and start kneading the flour
Form a ball then use a cling film to wrap around it
Chill in a fridge for 30 minutes
Half an hour later take the dough and knead it to a pie crust shape using a roller (which I don't have; a bottle of wine will do)
Put the kneaded dough over a baking tray then use a fork to decorate around the crust
Poke holes onto the dough for air holes
Lay a sheet of aluminum foil over the dough and fill it with the rice or beans
- I use a sauce pan and cover with the aluminum foil as an oven at it works!
- Put on stove (electronic number 4) *180 c* for 30 minutes
Meanwhile we can start making the filling
Mix Pumpkins, salt, grated nutmeg, cinnamon powder and milk into a blender (again I don't have a proper food blender so my poor little juice blender will do justice)
Blend well
Beat in 3 eggs and pour it onto the baking tray with our pie crust on.
- Put it on a saucepan over a steamer rack (if you have one, again I don't so an empty bowl acts as it)
- Attach 2 aluminum sheets big enough to cover the saucepan then Vola an oven!
Put on low heat (again number 4) and bake for 1 hour
Use a stick to poke through and if nothing sticks on it then the pie is ready!
Finally, here I have my DIY Pumpkin Pie!! Chill it in a fridge for a few hours before cut and serve!!
Not the best pumpkin pie looking around but I almost teared taking my first bite lol!!
