Cooking with my Daughter and Bringing Polish Cuisine to STEEMIT! Traditional Polish Dumplings (PIEROGI) made with love... and fingerprints!

One of my favourite things to do with my 2,5 years old daughter Zosia is to let her help me cook and bake. I've been cooking with her since she was 14 months old. Sure it takes twice as long, and the results are often less than spectaular, but it's really all about the process and I love watching her having so much fun. 

Today stuck at home on lazy and rainy day (it's a bank holiday in Poland) we have decided to go crazy in the kitchen and show you one of the traditional Polish meals. I think it can't get any more traditional: POLISH PIEROGI with potatoes and cheese. In the past, they would be made only to celebrate holidays - every occasion was accompanied by a different filling. Nowadays, "Pierogi" are the most popular dish in Poland and have become the symbol of Polish cuisine. 

SO LET'S START  - IT'S GOING TO BE SO MUCH FUN! 

INGREDIENTS:

250 ml warm water

1 egg

2 spoons of oil 

500 g cheese 

100-150 g of chopped onion 

600 g of cooked and cold potatoes 

salt and pepper to taste 

500 g of flour 

STEP 1: Pierogi Dough

In a large bowl stir together flour and salt. Add warm water, egg and oil. Stir the ingredients until well blended. In a seperate bowl prepare the filling:  mash (already cooked and cold) potatoes with shredded cheese. Season with onion salt and pepper. 

STEP 2. Separate the Pierogi dough into two balls. Roll out one piece at a time on a slightly floured surface until it is thin enough to work with but not too thin so that it tears. Cut into circles using a glass. 

STEP 3: Spoon some filling into the center of the circles. Fold the circles over into half-circles and press to seal the edges.

STEP 4. Place "Pierogi" into a pot with boiling water for about 3 minutes and leave them until they are up on the surface of water.  

STEP 5: fry the chopped onion and put it on Pierogi

HUNGRY? OUR PIEROGI ARE READY TO BE SERVED

Though it took a little more time - spending time together was a wonderful way to create memories and lessons that will last a lifetime!!!!!! 

Hope you enjoyed our quick recipe and will try it at home...   It shames to admit that for me it was the first time I made PIEROGI :)
