Hungarian goulash

About five years ago, in one of the gastronomic magazines, four lunch dishes were presented to Count Esterhazy. Two dishes took root in my family. One of them I suggest you try today.

Having visited Hungary, I realized that Hungarian cuisine is far from asceticism.

The dishes are sharp, fatty and very tasty. Spicy and sweet paprika in my opinion, everywhere except dessert. In the national cafes - called Charda (stylized under the old tavern) - you can taste all the national dishes. Do not forget about goose liver and stunned dessert "Shamlon galushka".

We cook goulash:

  • 1 kg - pork
  • 0,5 l - lecho (own production)
  • 5 medium-sized potatoes
  • 1 large onion
  • 8-10 tooth. Garlic
  • Paprika, cumin, chsmp, salt

For dumplings: 1 tbsp. Milk, 50 grams of oil, salt, 1 egg, flour, paprika, greens.

I make goulash in a cauldron. While it is heated - a couple of spoons. Oil, cut meat, onion, garlic. In the kazan I fry for 10 minutes meat, add onions and garlic, fry.

Then spread the contents of the can. Lecho, salt, pepper, seasonings, close tightly with a lid. I set the regulator to min t.

In 20 minutes. I add to boiling water in kazan, I leave room for dumplings and potatoes.

I recommend to add 1/2 tbs. Red dry wine. We leave the cauldron in the working mode for 1.20 min.

We set to cook the potatoes and we will take care of the dumplings. I like the custard.

Milk, butter, salt - bring to a boil, we intervene the flour and set aside until it cools. Then in the cooled dough we add finely chopped parsley, dill, paprika, egg and mix well.


In a saucepan, boil the water and cook the dumplings. Dipping his fingers in the hall. Take the dough, form the dumplings and load them into the pan. Pop up - then ready. We merge the water.

After the goulash boils, turn off the plate and after 15 - 20 minutes, pour on the plates. Is recommend with green onions, dill. When a student comes from Moscow, be sure to bake the Monkey Bread (retsi Gruzi with Huli).

And if there is a road, visit Hungary, amazing country, hospitable, benevolent people - and you will always be asked there: "Walking?" How are you?". Hungarian for me is always a reason for unrestrained fun.

я надеюсь вы хоть сами-то понимаете что вы написали, ибо ни один англоязычный не то что не поймет как делать, но и не сможет прочитать тоже. Пишите на вашем родном языке.

И да, на наших территориях гуляш можно делать из чего угодно, но ВЕНГЕРСКИЙ гуляш из говядины.
