Shrimp Pad Thai @senseicat

After spending a couple of weeks in Thailand, I absolutely fell in love with Thai people and their cuisine. One of my favorite recipes is Shrimp Pad Thai.

Ingredients:
4 tablespoons vegetable oil, plus extra as needed
1 teaspoon chopped garlic
1 tablespoon dried shrimp, optional
1/2 cup sliced pork
1/2 cup whole shrimp, shelled and deveined
1 tablespoon (shredded) preserved radish
1/4 pound medium-size dried rice noodles (soaked 60 minutes in cold water and drained)
Water
5 tablespoons Pad Thai Sauce, recipe follows
2 large eggs
1/2 teaspoon ground hot chiles, or more to taste
2 tablespoons ground roasted peanuts
1/2 cup sliced garlic chives or green onion
2 cups bean sprouts, rinsed, plus more for garnish
1 wedge lime

Pat Thai Sauce:
1 cup tamarind juice*(see Cook's Note)
1 cup palm sugar plus 3 tablespoons
1 cup water
1/2 cup fish sauce
2 teaspoons salt

Directions:
Heat the oil in a wok. Add the garlic and stir-fry until golden brown. Add the meat and shrimp and keep stirring until the shrimp changes color. Remove the shrimp to prevent overcooking and set aside.
Add the noodles. They will stick together so stir fast and try to separate them. Add a little water, stirring a few times. Then add the Pad Thai Sauce, and keep stirring until everything is thoroughly mixed. The noodles should appear soft and moist. Return the cooked shrimp to the wok.
Push the contents of the wok up around the sides to make room to fry the eggs. If the pan is very dry, add 1 more tablespoon of oil. Add the eggs and spread the noodles over the eggs to cover. When the eggs are cooked, stir the noodles until everything is well mixed-this should result in cooked bits of eggs, both whites and yolk, throughout the noodle mixture.
Add chiles, peanuts, garlic chives and bean sprouts. Mix well. Remove to a platter. Serve with raw bean spouts and a few drops of lime juice.
Pat Thai Sauce:
Mix all ingredients in a saucepan for about 60 minutes until it is well mixed and syrupy. Stir occasionally to prevent burning.

I just got back from Thailand 2 days ago and im so over this western food,lol take me back please my tummy misses thai food so much. Some shrimp pad thai will go a long way to easing my restless soul

Where in Thailand were you and for how long?

That is incredible. It is breathtaking right? I was in Phuket and Phi Phi Island and would love to go back. The Thai are beautiful, kind, and hospitable--not to mention their excellent culinary skills.

Absolutely stunning, especially the Phi Phi Islands. I'm with you, I'd love to go back too, its so hard to concentrate on work and sit in front of my pc when I think about it.

I completely agree they are so honest and hardworking too, makes me feel ashamed of how ungrateful I am for what i have back home.

Gosh i ate so much while i was there and im sure i didn't even scrape the surface I would go back and just spend my time eating my way through the country lol

I presonally don't like shrimp

You can always substitute or keep it vegetarian.

no i don't have to keep it vegetarian,
But i just don't like the taste.
Because... idk why i am weird.

This dish is reflecting amazing and i can feel it's deliciousness and essence of spiciness. And in my opinion these type of colourful dishes can attract people with it's appearance and many people prefer the spicy food and specially i eat lots of spicy food. Loooooove Pad Thai! So tasty and usually cooked to order. My favourite Som Tam (Spicy Papaya Salad, only 5 chilli's though as Thais like to put in 10!

Honorable mentions: Gai Med Ma Moung (chicken with cashewnuts) and Massaman Curry.

I lived in Thailand for two years, Teaching in a place called Bang Lamung just outside of Pattaya. A brilliant experience.

@senseicat how nice to go abroad and learn about other kind of food, I love asiatic food, here in Venezuela we have tamarind, peanut and curry, I will prepare, it looks beautiful. Nice dish, thanks
