Vegetarian lasagna recipe

Hello everyone!
I'm Sophie from Italy. I'm vegetarian since five years and I began to cook when I came in Rome to study at university. At the beginning I ate only pasta, but slowly I met vegetarian and vegan persons and my interest in cooking has grown little by little.
Today I will show you how to prepare an amazing vegetarian Lasagna.

INGREDIENTS

  • Lasagna: 500gr (17,6oz)
  • Zucchini: 2
  • Eggplant: 2
  • Red bell pepper: 1
  • Green bell pepper: 1
  • Yellow bell pepper: 1
  • Onion: 1
  • Mozzarella cheese: 1
  • Parmesan: as much as sufficies

To prepare our béchamel, we need:

  • Milk: 1 liter
  • Butter: 20 gr (1,5 tbsp)
  • Ovile oil: 30 gr (3 tbsp)
  • All purpose flour: (5 tbsp)
  • Nutmeg: as much as sufficies
  • Salt and black pepper

METHOD
First of all, dice all the vegetables and put them in a pan with a bit of olive oil and salt; let the vegetables cook for about 15 minutes at medium flame.
Now, we're going to prepare the béchamel;put butter and oil in a small pot and turn on the fire on a slow heat. Take a whip and mix until the butter is melted; add the flour and continue to mix so that it does not create lumps until it starts to boil. Now, little by little, we can add milk. Add salt, black pepper and nutmeg as you prefere and continue to mix everything for about 7 minutes.
To make lasagna I always let the béchamel a bit liquid, because it will curdle in the oven and this is going to cook better the Lasagna pasta.
We're finally ready to put together our ingredients and prepare lasagna.

In a pan, put a ladle(6-7 tbsp) of béchamel and cover the entire surface of the pan. Place the lasagna pasta in the whole pan.

Add some more béchamel to cover pasta; add, also, some vegetables, some parmesan and a bit of mozzarella cheese on the top. This is the first layer of our lasagna.

Now do the same thing until you haven's finish all the ingredients(pasta, béchamel, vegetables, parmesan, mozzarella cheese); usually, I do four layer.

Preheat the oven to 180°C (356°F); when is enough hot, put the lasagna in the oven and let it cook for about 40 minutes. At the end of the cooking, if you have it, you can set the oven on grill mode to make the top a little crispy. Allow to cool for at least 15 minutes.

That looks absolutely scrumptious and what a lovely post with pretty pictures. I have spent a couple of weeks in Italy and love the gelato. I made it a personal goal to try to eat as many flavors as possible. Welcome @seitan-dintorni

Thank you so much! I love gelato too (everybody love gelato), but I never tried to do it. We have to eat everything; it's good for our body, we have to respect it; it's good for our mind :)
