Ingredients for a delicious and healthy veggie pie that the whole family will enjoy!
Washed coliban potato, fresh baby spinach, chopped cabbage, diced zucchini and diced pumpkin.
Cook potato, pumpkin,cabbage and zucchini in a pan on the stove top adding cooking oil of your choice, i used avocado oil for flavor. Season with salt and pepper or chili if you like a bit of fire!
Lightly oil a baking dish and layer it with short crust pastry then fill with your freshly cut and washed spinach leaves, be sure that you have allowed time for leaves to dry off from washing or they will make your pie too wet!
Next top with your veggie mash from the stove top the cover with puff pastry for a divine and flaky crunch sensation! Give the top of your pie a good brush with melted butter and put in the oven for 45 minutes at 180C or 360F.
Once it is cooked, allow to cool for 10 minutes before serving. Use ketchup or hot sauce or even chunky tomato relish as accompaniment and you are all set! A healthy and delicious meal everyone will enjoy!
