In a town known for its hot dogs, pizzas, and Italian beefs, some folks need to take a break with something light and fresh. Karyn's Fresh Corner is a raw-food restaurant, which means it doesn't serve food that has been heated over 110°F (43°C). Eating raw food provides many healthy benefits. Heating and/or cooking food often destroys its enzymes, which the body needs for metabolic functions. Eating food without enzymes can make digestion more difficult and may even lead to toxicity within the body.

But don't equate raw food with "rabbit food." Raw food is much more than just salad or carrots and celery sticks. Owner Karyn Calabrese has come up with creative ways of not cooking vegan versions of some familiar dishes, including ravioli, stuffed peppers, deep-dish pizza, and even ice cream! Much more than just vegetables thrown onto a plate, there is a lot of technique and work that goes into creating these dishes. How many places do you know that can create tasty pasta primavera out of zucchini and macadamias?

Karyn's also has shelves lined with books available for purchase, as well as classes in nutrition, detox, yoga, and pilates. After all, healthy eating and living should be incorporated into more than just one dining experience.

Admittedly, raw food isn't for everyone. If you're strictly of the meat-and-potatoes variety, Karyn's may leave you feeling unfulfilled. However, you won't know if you like it until you try it.
