So this is a recipe that I've been using for a while for homemade chicken parm. It is pan fried, and broiled at the end with a bit of mozzarella cheese crusted on top. Hope you enjoy!
Ingredients:
2 boneless chicken breasts
1 cup flour
2 cups bread crumbs
1/4 cup parmigiana cheese grated
2 eggs, beaten
Salt/pepper to taste
1 tsp oregano
1 tsp thyme
1/2 cup olive oil
1 cup shredded mozzarella cheese
Steps:
Pound the chicken breasts flat with a rubber mallet or toothed kitchen mallet between two pieces of parchment paper (plastic wrap is fine).
Combine bread crumbs, parmigiana, salt and pepper, oregano, and thyme in a bowl.
Coat the breasts in the flour, making sure that they are thoroughly covered.
Take the floured breasts and coat them with the egg wash, then quickly transfer to the breadcrumbs, again thoroughly coating. At this time, they should look like this:
-Heat the olive oil in a nonstick pan until 1 bread crumb sizzles when you drop it in. When ready, pan fry the coated breasts for approximately 5 minutes on each side, or until golden brown.
-Remove from heat and place on a greased oven pan. Divide the shredded mozarella between the breasts and broil on high, close to the heat, for 3-5 minutes, or until mozzarella is getting bubbly.
-Serve! I like to add a little tomato sauce for some acidity!
