Today I'm submitting a little recipe I like to use to make sliced pickles at home! You can use any number of veggies for this, including but not limited to cucumbers (which I use), carrots, radishes, etc. Keep in mind that you will be boiling vinegar, so be prepared for a slightly noxious smell as the simmering comes to completion. This particular recipe is for approximately 1 full mason jar of pickles.
Ingredients:
1 cup water
1 cup vinegar (apple cider, rice wine, or just white vinegar)
1 Tbsp sugar
1 cucumber, thinly sliced
1 tsp coriander seeds
1 tsp whole allspice or clove
Combine water, vinegar, sugar, coriander seeds, and allspice, in a small pot and turn up to medium heat. As the mixture begins to simmer, turn down the heat to low and simmer for 3 minutes.
Place all the sliced cucumbers (or veggie of choice) in a small bowl. When the pickling liquid has come to completion, pour the liquid over the veggies and let sit until room temperature.
Transfer all contents to a mason jar and refrigerate. Personally, I liked to wait a few hours to allow the brine to take its full
effect!
