GRILLED Mac n' Cheese Sandwich!

Hey all,

I just finished eating and I realized that I had to share this amazing concoction. After trying to find a use for 2 day-old Mac n' cheese, I decided to pack a part of it into a sandwich-size portion (about 1/2 cup), and make a grilled cheese sandwich with it! For me, adding some extra cheese was a no brainer. I just sprinkled a little shredded cheddar and Monterey Jack in the middle and grilled away! Here are the steps:

  1. Set aside about 1/2 cup of left-over (or newly made, doesn't matter) Mac n' cheese, and pack it into a sandwich size portion. You can get creative here- I just used a large ramekin.

  2. Butter two pieces of white bread generously on both sides and assemble sandwich. You can add in about another 1/3 cup of shredded cheese here for some extra umph.

  3. Heat a pat of butter in a seasoned cast iron skillet (cast iron is the best for a project like this). When surface is sufficiently heated, place sandwich on the pan and cover. After about 10 minutes, flip the sandwich over.

  4. Finish cooking the sandwich, about another 8-10 minutes on the other side. The Mac n' cheese should be getting nice a gooey right about now.

  5. If you feel so inclined, I like to serve mine with a little Sziracha Ketchup for dipping! This mixture consists of equal parts sziracha and ketchup. Cut in half and serve!
