How to turn left over rice into a refreshing and nutritious salad
I recently had bunch of brown and wild rice with lentils in left over without any gravy in sight. This meant I needed to re-purpose it and so I decided on this yummy recipe which we also sometimes make with noodles. This recipe is quick and totally transforms the rice into a dish that no one is going to moan about. You can change the ingredients for those that you enjoy more but here is what I used.
Ingredients
- 2 cups of left over rice
- 1 cup of shredded cabbage
- 2 baby brinjals/ eggplant
- 1 tbs chopped peppadews
- cherry tomatoes
- 80g cheddar cheese
- 40g feta cheese
- 4 snacking peppers
- 1/2 shallot
-3 red salad onions
-200g strips of beef
-200g diced bacon
-1tbs of honey - 200ml of mayonaise
-50ml white wine vinegar or similar
-1 tsp of mustard powder - Olive oil to fry with
- Salt and Pepper to season with
Method
- Chop all of the ingredients to small pieces either blocks or slices
- Fry the brinjals and shallots until soft and tender
- Fry the meats together until cooked to your liking (remember to season them with salt and pepper)
- In a small bowl mix the mayonnaise, vinegar, honey and mustard power together well
- In a big bowl mix all of the ingredients together and then drench in the sauce before a final mixing
- Season to taste and serve :)
Serve as a side or a main- this is bound to please anyone! Its also really good to use up nay leftover you have in the fridge or lying around.
