How To Prepare Anchovies (Bolinao): The Cebuano Way

Tara! Let's eat! Manga-on ta :)

This morning my father got home from Saac. It's a local wet market here in Lapu-Lapu City. He brought home with him a kilo of anchovies, "dilis" in Tagalog and we call it "bolinao" in Cebu.

Now I want to prepare something for breakfast like a festival of bolinao. I prepared three dishes out from these little but delicious local fish: Kinilaw nga Bolinao, Inun-unan and Torta.

Kinilaw is like a salad made from fresh fish with vinegar, spices, vegetables like onions, ginger, chillies, calamansi, tomatoes, etc.

Inun-unan is cooked with vinegar and salt with some pepper and ginger in it.

Torta is like fried fish cakes made from fish, eggs, flour, garlic, onion, spices and seasonings.

Which one is your favorite? I personally love Kinilaw. It is very appetizing. But all three, I think, breakfast or any meal would be best shared with family and loved ones.
