1 c. sugar
3 large eggs
1/2 c. vegetable oil
1 large pear, cut into bite pieces
1/2 c. bittersweet dark chocolate chunks
2 tsp baking powder
1/2 tsp vanilla extract
1/4 tsp salt
Steps and Procedures:
Preheat oven to 350F degrees. Spray or grease a 9”x5” loaf pan with spray made with flour, if using non-stick pan.
In a small bowl, combine flour, baking powder, and salt.
In a large bowl, whisk together sugar, yogurt, eggs, and vanilla until smooth. Add the flour mixture just a little at a time until thoroughly combined.
Then use a rubber spatula to fold the oil into the batter until fully incorporated.
Pour 1/3 of the batter into the pan. Sprinkle 2/3 of the pear pieces and chocolate chunks.
Pour the rest of the batter on top and gently spread it smooth. Sprinkle the rest of the pear pieces and chocolate chunks.
Bake for 55-60 minutes or until a wooden stick inserted comes out clean.
Allow the cake to cool for 10-15 minutes.
Invert and transfer to a cake platter. Serve. Enjoy!
