Maida1 cup
Salt1/2 tsp
Ajwain1/2 tsp
Oil2 tsp
Water1/3 cup or as needed
INSTRUCTIONS
In a giant bowl sieve the maida flour (refined flour).
Add salt, ajwain (carom seeds) and oil within the flour.
Now whereas adding very little water at time begin kneading dough for namkeen.
Knead the dough for maida namkeen. The dough ought to be alittle softer than roti dough. Once kneaded keep the dough aside to rest for ten min.
Now divide the dough into equal size balls.
Take a maida dough ball on rolling board and roll into spherical 6-7 in. wide roti.
Now employing a knife or pizza pie cutter cut the dough into 1-1.5 wide strips.
Rotate the rolling board and cut roti into 0.5 in order that strips of maida dough remains.
Now to fry the maida namkeen, heat oil in an exceedingly kadhai.
Check if oil is hot enough by adding atiny low piece of maida dough.
Once the oil is prepared add the maida dough slices of namkeen into oil and deep fry it.
Fry the namkeen or nimki till it becomes golden in color.
Once fried, take the namkeen out and place it on room towel or paper for soaking additional oil.
Delicious namkeen is prepared.
