Here's another entry for the Italian-themed Foodchallenge - a traditional, rustic antipasto!

Antipasto is one of my favorite appetizers to make because it doesn't have to involve much intensive cooking - only going to your favorite Italian market or deli and choosing your favorite combinations of meats, cheeses, fruit, bread and of course, wine!

Christmas Antipasto

Sopressata
Genoa salame
Mortadella
Brasciola
Prosciutto
Buffula Mozzerella
Parmesan Reggiano
Black Pepper Manchego
Smoked Gouda
Marcona Almonds
Maple Glazed Walnuts
Candied Apricots
Brandy Cherries
Blackberries
Fresh Grapes
Honey Drizzle

Wine: Sparkling Brachetto

Of course, part of the fun of antipasto is choosing your own ingredients. I made this antipasto as a Christmas appetizer, so I opted for richer, sweeter ingredients and a heavier dessert wine to give it a warm, festive feel - you might like this idea, or try something lighter for the summer season - it's up to you!

It's best to do your ingredient shopping at a shop that encourages you to sample - it's enjoyable, and gives you a chance to experiment with different flavor combinations to create your own flavor palate. Pick your favorites, or ask for a recommendation. I love it when I discover something new or unexpected to add to my antipasto.
