This dish is a mixture of various vegetables. One can use any type of leafy vegetable with green plantain or potato. Raw mango is used for a slight sour taste.Grated coconut and some spices are also used. This is a tasty and delicious dish and easy to prepare.
For this particular dish ,I have used red spinach,green spinach and drumstick leaves.All these leaves are rich in vitamins and minerals.
Ingredients
Green leaves - 100 grams
Potatoes - 100 grams
Raw mango - 1/2
Grated coconut - 1-1/4 c
Green chillies - 2
shallots - 5
Roasted cumin seed powder -1 t
Turmeric powder - 1/4 t
Cooking oil - 2 T
salt - to taste
Curry leaves - 2 stalks (optional)
Method :
Cut the potatoes and mangoes into squares.
Cut spinach into 2 inch long pieces.
Drumstick leaves can be taken as it is.
Crush the shallots and slit green chillies.
Put all the vegetables in a pan and cook with salt and turmeric powder.
As soon as it is cooked, add coconut ,crushed shallots and cumin seed powder ,stir well and cook for another 2-3 mins.
Remove from fire and add cooking oil and serve it hot.

I really have to try this recipe. A year ago I stopped eating meat and since then I am really passionate about cooking and trying new vegetarian dishes :).
