A delicious and nutritious meal, this curry makes for a satisfying week-night supper that’s quicker and cheaper than ordering a takeaway. The yogurt adds creaminess to the sauce, although just be carefully not to overcook it. It goes great with either chicken, beef, lamb or pork.
This curry recipe is made in 4 easy steps and will be ready in 20 minutes.
Ingredients (for four):
400g chicken, sliced
3 tsp sunflower oil
½ tsp mustard seeds
2 garlic cloves, chopped
10 curry leaves or 2 tsp curry powder
1 large onion, chopped
2 green chillies, deseeded and chopped
½ tsp chilli powder
1 tsp ground coriander
½ tsp ground turmeric
3 tomatoes, chopped
100g baby spinach leaves
300g plain yogurt
Naan bread or rice, to serve
Cooking Methods:
Step 1: Heat the oil in a large saucepan and add the mustard seeds. Then add in the garlic, curry leaves (or curry powder) and onion. Cook on medium heat for 5 minutes, until the onion becomes soft.
Step 2: Next, add the chicken and cook for 5 minutes until the colour turns a dark brown.
Step 3: Throw in the green chillies, chilli powder, coriander and turmeric. Mix well and add the tomato pieces. Stir, then finally add the spinach. Cook over a low heat for a further 5 minutes.
Step 4: Remove the pan from the heat and slowly add the yogurt, stirring well regularly. Serve when warm with naan bread or rice.
Please remember, when yogurt is heated too much it separates into solid and liquid layers, therefore not integrating properly with the dish. Adding the yogurt gradually as the dish cools will ensure that it retains its creaminess.
And voilà! A great curry dish for you to enjoy and ready in no time at all. It’s has quite a mild flavour to it and also comes with the added benefit of being healthy for you too. My family really loved it when visiting from China. Hope you enjoyed this recipe and as always any questions, please let me know in the comments below.
Enjoy!
Looks very tasty!
Im gonna do it !!! :D
It certainly is, my friend! Thanks so much for the early comment! :)
Let me take to try
Looks delicious!
Thanks very much, @team101! :)
It looks yum yummy.
We mostly used coconut milk for curry here and they said it brings too much cholesterol as a result. some have substituted with fresh milk instead but I have actually heard of using yogurt somewhere. Quite sure I've not had any yogurt sourced curry before.
Very common to use yogurt in many places in India, used more for "mild" curries.
Thanks for the information.
It's very tasty and thanks for the comment, but in terms of the use of yogurt, @cryptobiker put it best! :)
you're welcome
Used mostly in the North of India in curries. The Southern Indian population (poorer population hence cheaper meat cuts) do not use yogurt as rule and their recipes are far hotter ......
Thanks for the information
This is a good recipe if you want a curry in a hurry. If you want one with more flavour, cook the chicken on the bone for 40 minutes and then leave it to cool overnight. Curries are always best the next day, I also add potatoes (peeled and halved ) lovely and soft the next day and they absorb that lovely curry flavour and it goes further as well.
Voted.
Potatoes and curry were made for each other, I agree :]
Hey, @cryptobiker! You are spot on! A nicely marinated curry will be awesome the next day. This recipe is more for those of us in a bit of a rush and a quick fix (especially given my bust schedule, lol). But yes, otherwise mixed with potatoes and the overnight absorption, it would be perfection! :)
@rea, your food always looks so delicious! I'm quickly building a long list of recipes of yours to try myself (no secret there).
I have one question: do you think could plain, unsweetened, whole milk kefir be used in place of the yogurt with similar end results?
Awww, thank you for saying, you're too sweet! It's really nice and good if you don't want to wait around to long for it to cook.
In terms of kefir, I have never tried it but from what I've read, might work out as good alternative. Thanks for introducing me to something I will definitely sample on my next visit to the supermarket! :)
Looks delicious! Thanks for share the recipe! ^_^
Thank you for the great comment! :)
This dish looks fantastic! I can just smell all those spices cooking away! I just asked Bianca if she would like to eat this tomorrow! I hope I can find curry leaves in the shop.
