A good healthy chocolate only takes three ingredients, more if you want, it is all a matter of choice and it is super easy! I am always trying something different and this was my most recent take on my homemade healthy chocolate. It turned out pretty tasty.
All you need for this recipe is:
- 4 oz of cacao butter (approximately)
- 1/2 cup of cacao powder
- freeze dried pineapple and/or mangoes and non-sweetened coconut flakes
Measure out your cacao butter and in a heavy stainless pan or double boiler, heat on low until melted, the lower the better as you want to keep your cacao butter as raw as possible.
As you can see by the picture, I had a tad more than 4 oz but really, it is just approximate. No need to be too particular.
While your cacao butter is melting, use either grass fed butter or coconut oil to grease up whatever pan you choose. I prefer to use a glass pie pan for this.
Put a good layer down of your dried fruits in your pan. How much you use is up to you, when I use raisins, I do not put as much in as I did here with the pineapple and coconut because raisins are much sweeter than most dried fruits.
Place in the refrigerator for an hour or so until fully set. Once it is set, simply use metal spatula or a knife to cut into a few big pieces . Remove them from the pan and break into smaller pieces as desired. Serve immediately or store in a glass container with a tight fitting lid in your fridge. Homemade chocolate does not have all the additives put in store bought chocolate to keep it from melting at room temperature so it must be stored in a cool place.
- If you just want plain chocolate without the fruit, you can use 1/4 raw honey (more or less to taste) and melt it in with the cacao butter.
- Raisins are a good choice to sweeten and the one I use most
- When coconut and raisins are used together, it tastes very much like a Mounds bar - but better and it is actually GOOD for you! :D
- 1/2 tsp of vanilla can be added for extra flavor to the mix before pouring into the pan.
