This recipe for today is a simple, healthy and affordable meal for family. I called it Mixed Vegetables with Fried Banana.
Who says that banana can't be included in a dish? We often see bananas in desserts like cakes and ice cream. However this banana that gives a special taste that adds sweetness on it.
A new way to cook vegetables is limitless till you find a way to create and be creative in cooking with limited resources around in a budget friendly pocket.
All you need are the following ingredients:
Cabbage
4 pieces Sweet Potato (yellow)
1 medium size Carrots
2 pc banana (saba)
1 small red onion
3 cloves garlic
Here's how:
1.Peel and chop the following; cabbage cut into strips, saba slice about an inch,both carrot and sweet potato cut into strips.
2.Fry banana till golden brown both sides. Set aside. In the same pan saute garlic, onion and sweet potato. Stir for few minutes.
3.Add some salt and ¼ cup of water. Let it simmer before adding cabbage and fried banana.
4.Give a good mix till all ingredients are well blended. Cook in low medium heat and adding meat seasoning and pepper.
5.For the last part, add chicharon and cover till it simmer. Serve immediately with rice.
Final Taste Test:
Fried banana makes this recipe so good. The sweetness from swee potato and fried bananas are definitely the main reason why it taste so savory and rich in flavor.
I enjoy every bit of it. Chicharon also did a great job to have some fats. Well I guess you can add some boiled quail eggs.
