Clam linguine
Boil the noodles in salted water
Mince a garlic and set to the side.
In a pot, add 2/3 cup evoo and let get hot
Add the garlic mashing to extract the juices as it cooks (1-2 min)
Add 1 bottle of CLAM juice
1/4 teaspoon each salt pepper and oregano
Simmer 5 min
Add two cans of clams with juices
Simmer 10 min
Add chopped green onion tops and parsley
About a handful of each
Simmer 5 min
Plate the pasta, scoop sauce over noodles and garnish with fresh grated parmesan cheese. Serve with a toasted bread
