Bittermelon with egg and ground pork
It's Monday, me and my husband prepared a healthy recipe for Steemian Community
This menu is more on vegetables.
INGREDIENTS
- 2 pieces of bitter melon (ampalaya), seeds removed and cut into thin slices
- 1-2 medium-sized tomatoes, sliced
- 1/4 ground pork
- 2 eggs beaten
- 1 medium sized of sliced onions
- 3 gloves of minced garlic
- salt for bittermelon
- 2-3 tablespoons of cooking oil
- 1/2 cup of water
- salt and pepper to taste
PROCEDURE
- Place the bitter melon in a large bowl put 2-3 tablespoon of salt then mash them together wash then drain it set aside (this is to lessen its bitterness)
- In a pan over medium flame, heat oil and saute garlic, onion, tomato and ground pork (if added) until meat is tender.
- Add 1/2 cup of water.
- Add the bittermelon and saute' for at least 2 minutes.
- Pour in the beaten egg and stir to mix with other ingredients.
- Season with salt and pepper to taste.
- Remove from heat and put in a serving plate with plain rice.
TIP
Don't overcook the ampalaya, preserve its fresh green color and crunchiness.
