This decadent, raw, vegan cake is sure to please anyone. It’s raw, organic and gluten free! All the ingredients are excellent sources of vitamins, minerals, and antioxidants. Being healthy has never tasted so good!
INGREDIENTS:
CRUST:
1 cup mixed nuts (an equal part of almonds, macadamia nut, and walnuts)
1/2 cup raisins
1/2 cup dates
FILLING:
raw vegan chocolate cake
2 large ripe avocados
5 tbs raw cacao powder
5 tbs maple syrup
4 tsp vanilla extract
1/4 cup coconut oil
2 tbs almond butter
1/3 cup goji berries
pinch of sea salt
DIRECTIONS:
CRUST: Grind all the nuts in a food processor first. Do not over process, you do not want to puree them! Add raisins and dates. Pulse until the mixture is well combined. Spread on the bottom of a round 10-inch glass pie plate. Cover with food service film and refrigerate.
FILLING: Place all the ingredients in a food processor and blend until smooth.
Take the crust out of the refrigerator and spread the filling evenly all over it. Sprinkle with shredded coconut and decorate with goji berries, nuts, and raisins. Cover with the film and put in the freezer for 3-4 hours. Serve chilled!
