A salad made of leafy greens, red bell pepper, raddish, carrot and roasted chickpeas.
For dressing, I mixed some dijon mustard with balsamic vinegar and nutritional yeast and poured it over my salad. There is no need to pour oil on it, because oils contain huge amount of calories but no nutrients.

The nutritional yeast in the dressing is a good idea. I love it in but have only used it in baked recipes
You have no idea how much I love nutritional yeast :D Although it's very dry, sometimes I even eat it plain, just with a spoon :)))
Yep it's such a great substitute for the cheese in mac and cheese that's where is use it a lot.

Huge amounts of calories, true, no nutrients? You are probably talking about highly processed oils, cold-pressed oils have actually more nutrients because they are condensed. For example 100g of olive oil has 14 mg of vitamin E while 100 g of olives have 2.4 mg of vitamin E.
The oils lack the fiber though.
Roasted chickpeas myself in spices a couple of days ago, so good.
