Haha, my last name being Piper, I had this rhyme sang to me quite a bit as a kid. However, it's very appropriate, because Piper's apparently DO love peppers!

Every year, my dad @dempsey, grows pepper plants in his back yard. He scatters them about the back yard between flowers and various fruits trees and plants. He always has a bunch of peppers!

Jalapenos are by far my favorite! This is our family recipe for pickled peppers!

Ingredients need to make one quart jar:

15-20 large Jalapenos, remove stems and slice
2 Garlic Cloves, smash and peel
1 1/4 cup Distilled White Vinegar
1 1/4 cup Filtered Water
4 tablespoons Sugar
2 tablespoons Pickling Salt or Sea Salt
fresh lime juice from 1 lime
fresh lemon juice from about 1/2 lemon
1/4 Sprite
1/2 cup soy sauce

COOKING DIRECTIONS:
In a medium sauce pan, combine the water, vinegar, garlic, sugar,sprite, soy sauce, salt and lemon and lime juice, and bring to a boil. Stir gently to dissolve the sugar and salt. Bring to a rolling boil and then add the sliced jalapenos.Press them down into the boiling mixture so they stay submerged. This lets the pickling agents we added do their magic! Remove from the heat and let the pot cool for 10-15 minutes.

Use tongs to transfer the jalapenos into a clean jar. pour the pickling juices over the sliced peppers until you've filled the jar. Let them continue to cool at room temperature then add a lid and pop them into the refrigerator for at least 1 day and up to 2 weeks before enjoying.

I love this pickled pepper juice on fresh peas, greens, and vegetable soup! What a snappy addition to nachos,wings,sandwiches, salads, omelets or you name it! We used these tasty peppers alongside grilled chicken and stuffed fresh sausage and in a recipe for homemade guacamole steak wraps. These peppers are also the perfect topper for a pulled pork bbq sandwich!

The have a taste combination of hot, salty, sweet, sour, and citrus. I think that the Sprite adds a spark giving them an awesomely unique taste !


Chicken Wings " Hot Wing " Recipe

I also use these pickled peppers to make the best Hot Wings you've ever had!
I put fresh chicken wings in a large pan, cover them with these pickled peppers, seasoned salt and black pepper. I add a little olive oil or butter and bake them wrapped in foil at 300 degrees for two hours, or until they are tender. Then I take them outside and smoke them on the grill for about thirty minutes on each side until the outside is firm. This is about 30 minutes on each side.
My dad's smoking method:
"About an hour ahead of time dump a cup of hickory chips in water to soak. Fire up your charcoal grill with all the charcoal piled on one side of the grill. Once the charcoal is white hot and not flaming, drain the hickory chips and wrap them in aluminum foil. Poke several slits in the top of the foil. Lay the foil of chips directly on the coals, slits up. Once the chips begin to smoke, replace the grill rack and position the butt on the opposite side of grill from the heat. The chicken just falls off the bone,they are incredible. You can add buffalo or hot sauce if you prefer, but these already have great heat and flavor!

Every Halloween, we have a family peanut boil at my mom and dad's house. All the kids and grandchildren come and everyone dresses up in costumes. The peanuts are always the centerpiece though!

CAJUN BOILED PEANUTS

1/2 bushel green raw peanuts, in shells
1 (3 ounce) package dry crab boil
1 cup pickled jalapeno peppers
1/2 cup salt
4 tablespoons Cajun seasoning
couple dashes red pepper flakes

Place peanuts, crab boil, pickled jalapenos, salt, Cajun seasoning, and red pepper flakes into a large pot (fish cooker, turkey deep frying pot) cooking with a propane gas powered cooker. You could use a gas grill that has a burner on it or reduce the recipe's quantities and cook inside on the stove in a large stock pot.

Pour in water to cover the peanuts and stir until mixed well. Cover and cook on medium heat until peanuts are soft, at least 6 hours. Stir occasionally, and add water as needed to keep peanuts covered. Drain, serve hot or cold.
I put the leftovers in freezer bags and freeze to enjoy for months to come by just heating them back up from frozen to enjoy!
