Nicely put together how-to! I've made kombucha for years and just haven't gotten around to making acv, but this is inspiring. I'm wondering if you've ever tried adding herbs as well? In some of the herbalism work I do I know that instead of tincturing with alcohol, some people like to use vinegar. I remember reading a little while back that alcohol, vinegar, oil and water all pull different constituents from plants when tincturing. Thanks again! I'll follow you to keep an eye on more homesteading and diy food posts.

That's really interesting, I have not used herbs when making ACV. I would love to get into that though, it sounds right up my alley. Thanks for the inspiration.
