To start this week off weβre making some cookie dough ice cream bars. These make a perfect refreshing and healthy treat. Thereβs a creamy ice-cream layer on top and a crumbly cookie dough layer at the bottom. Very simple to make and unbelievably delicious. Plus, you only need 6 ingredients to make these β umm do I have your attention yet?
The combo of banana, almonds and chocolate is perfect! I just recently discovered it and have been obsessed with it ever since. You get a bit of everything in here. Freshness from bananas, rich chocolaty touch and priceless nutty flavor to finish it off.
Itβs getting super warm here where I live and all Iβve been craving lately are cold foods. I took a step back from my porridge and more switched to overnight oats. Iβve discovered some banging combos so get ready for those recipes because they are coming real soon.
Back to these amazing bars in front of us. They only took me about 20 minutes to make and are of course no-bake. You just need a food processor, a freezer and a few simple ingredients to make.
Try making these bars instead of buying expensive vegan ice-creams this summer. Your body and wallet will thank you later.

Recipe | Cookie Dough Ice Cream Bars ππ«
Cookie dough layer π«
- Ingredients:
β’ 100 g oat flour
β’ 5 dates
β’ 3 tbsp almond butter (you can find a recipe for how to make your own one at home here)
β’ 2 tbsp cacao powder
β’ splash of plant-based milk
- Method:
1/ In a food processor or high-speed blender add oat flour, dates, almond butter and cacao powder. Blend until you get crumbly texture.
2/ At this point you might already be finished, depends on how moist the dates you use are. Mine were pretty dry so I added a splash of plant-based milk. Blend again. The dough should be crumbly but it should stick to the side of your food processor if you press it at the side with a spoon, like shown in the picture.
3/ Transfer to a tray lined with parchment paper. Even it out and press down with spatula or hands to you get an even layer.
Ice-cream layer π
- Ingredients:
β’ 3 bananas, frozen
- Method:
1/ Cut frozen bananas into smaller pieces to make it easier to blend.
2/ Transfer to a food processor and blend until you get smooth ice-cream like texture.
3/ Transfer on top of your cookie dough layer and even it out.
4/ Put in a freezer for 3+ hours or overnight. Cut into bars once you take it out of the freezer. Store in a freezer.
And here we have it! Just look at that crumbly dough and that creamy ice-cream!
