Hi guys, today i want to share with you a story about one amazing, superfine, delicious cake. It’s about “Moskva šnit“ (Moscow cake), which is a sweet brand from Serbia. The main ingredients of original cake are almonds, cherries and pineapple.
Far in 1974 one lady, who has been working in pastry shop in Belgrade hotel Moscow, got a proposition from her director to make something new. That is when “Moskva šnit” was created and became a most popular sweet brand of hotel and Belgrade citizens. A lady was Anica Džepina and according to hers original recipe “Moskva šnit” is preparing more than 40 years. The brand is protected so you can also taste this recognizable flavour in pastry shops in London, Vienna, Budapest, Rome, Chicago and Geneva.

Although the recipe is in secret, some thing are revealed: fruit should be boiled dense, so the cake can be fresh for a longer time; there are two types of cream, prepared separately and combined in one (yellow butter cream); there are almonds inside the cake. There are many different recipes, i will share with you mine where i use hazelnuts instead of almonds.

RECIPE FOR “MOSKVA ŠNIT”
Needed for 4 crusts:
- 16 egg white
- 16 tablespoons of sugar
- 24 tablespoons of ground nuts
- 4 tablespoons of ground hazelnuts
- 4 tablespoons of flour
Cream for cake:
- 16 egg yolk
- 12 teaspoons of sugar
- 1 vanilla pudding
- 500 ml milk
- 1 tablespoon of starch
- 250 gr butter
And still need:
- 500 ml of sweet cream
- 500 gr of cherry
- 1 small canned pineapple
- 150 gr of roasted, chopped hazelnut
Crusts: mix 4 egg white, then gradually add 4 tablespoons of sugar and mix densely. Add 1 tablespoon of flour, 6 tablespoons of ground nuts and 1 tablespoon of ground hazelnuts. Smoothly stir with a spoon. Pour into a 23 x 33 cm baking tray and bake 12-13 minutes at 200 ° C or depending on your oven. Repeat the procedure for the remaining three crusts.
Cream: mix good yolk and sugar, in 150 ml milk add starch and vanilla pudding, than combine everything together. Put the rest of milk to boil and add the prepared mixture. Cook in medium temperature with constantly mixing. Let the filling cool down and after that add well mixed butter.
Before filling a cake mix sweet cream.
Filling:
first crust, cream, cherries, chopped hazelnuts, sweet cream, than second crust cream, pineapple, chopped hazelnuts, sweet cream, third crust, cream, cherries, pineapple, chopped hazelnuts, sweet cream and at the top fourth crust. Decorate as you wish.
