Lazy Saturday morning pancake breakfasts are one of my favorite ways to start the weekend.
I made these two ways - with and without mini chocolate chips.
I have learned that the best pancakes come from the ugliest (lumpiest) batter.
Mixing too much always seems to leave them dense and flat.
The other big pancake game changer has been cooking them in butter instead of vegetable oil.
The butter makes them so good, you won't need to top them with syrup or whipped cream.
I've also noticed that a lot of make from scratch pancake recipes call for sugar - I've never found pancakes to need it, so I skip it and add a teaspoon of vanilla instead (although I suppose you could have both if you wanted a sweeter breakfast).
