Hi! Do you like street food?
I would like to show you how you can prepare gluten free and vegan tapioca pancakes. In Brazil, it is traditionally made from tapioca starch.Β I had the opportunity to observe how they are prepared step by step in food track on the street. They taste delicious ππ
Ingredients:
- 6 tablespoons of tapioca starchΒ
- 50 ml of water
- a pinch of salt
Mix the ingredients with your hands. Crumble the mixture between the hands until it doesn't stick.Β
Sieve directly on a strongly heated pan. Β
Add the topping:
- jackfruit
- handful of spinach
- tomato pieces
- a ripe avocado
- one tablespoon of black olives tapenade
Fold the pancake in half and leave it in the pan for a few minutes. Finished!πΒ
A sweet version:
Sieve the mixture into a hot pan.
Add the topping:
- banana crushed by a fork
- coconut shrims
- cinnamon
Fold the pancake in half and add:
- coconut yoghurt
- and maple syrup

Ohhh..I do really finally have to try this tapioca miracle :D People just put it on the pan and it suddently changes from powder to a sold one piece thingie :D I've seen some cool recipes with eggs and avocado inside....asked about tapioca next day in the local store but they don't have it...so I've let it go since then
