MALVA PUDDING

This is a South African pudding with very few rivals in home winter comfort eating at its best. This golden sponge soaked in a cream syrup eaten warm with custard,cream or even ice cream.

Ingredients
Pudding
15 ml (1tbs) vinegar
125 ml (½ cup) milk
30 g (2 tbs) butter
140 g (1 cup) cake flour
5 ml (1 t) bicarbonate of soda
1 ml (pinch) salt
100 g Granulated Sugar
15 ml (1 tbs) apricot jam
1 extra-large egg

Method
Pudding
Grease a 20 cm oven-proof dish.
Preheat oven to 180◦C
Cream butter and sugar together until light and fluffy.
Dissolve the bicarbonate of soda in the milk set aside
Add the egg and apricot jam to the butter and sugar mixture and mix well.
Dissolve the bicarbonate of soda in the milk.
Sift the flour and salt together
Now alternate into the creamed mixture with the flour and milk mixtures
stir in the vinegar.
Pour into the prepared dish
Bake in the preheated oven for 40 – 45 mins
Now make the sauce

Sauce

Ingredients:
125 g butter
5 ml (1 tsp) vanilla essence
185 ml (¾ cup) fresh cream
125 ml (½ cup) water
5 ml (1 tsp) vanilla essence
100 g (125 ml) White Sugar

Method
Mix the butter, sugar, water and cream in heavy based saucepan
Simmer gently 2 mins whilst stirring
Remove from the heat and add the vanilla essence
Pour sauce over the pudding while it is still hot
Pierce the pudding with a fork to allow the sauce to be absorbed into the pudding

Try some different variations as the sauce is ready add some Amarula Cream Liquor or Irish Cream before soaking

This is one of my very favorites. My mum used to make me one of these after a long train ride home from army, no matter what time of the night or day. Really nice memory, thank you.
