My Own Version of Humba Dish (Sweet & Sour Pork Dish)

Hello steemians!

I'm here again to share with you my own version of humba, a pork dish popular to the southern part of the Philippines, also known as Bisaya, Filipino people native to the Visayan region. Humba is considered as one of the delicacies of the region. The part of the pork that I will be using in this recipe is the head of the Pig.

The ingredients needed are:
1/2 kilo pork head, cut in desired pieces
2 gloves garlic, crushed
1 small onion; chopped
1/4 cup soy sauce
1/3 cup vinegar
1/4 cup brown sugar
3 bay leaves
1 cup rice water
1/4 tablespoon ground black pepper
Cooking oil

The first thing that you need to do is fry the pork in a little bit of oil until it turns golden brown.

Meanwhile mixed the other ingredients (garlic, onion, bay leaves, sugar, soy sauce, and rice water). When the pork has turn golden brown, pour down the mixture to the pork and continue cooking. Cover the wok and let it simmer until the pork is tender. If needed pour a bit of water to prevent the pork from drying out and continue cooking until the desired tenderness is achieved. If you think the pork is almost done pour the vinegar and let it simmer for a couple of minutes more.

When the liquid has turn to a saucy sticky consistency, adjust the taste according to your preference. Stir it once in a while then turn off the heat.
