Hi, Steemians! I would like to cook for you a sweet colorful Thai dessert - Bua Loy Sweet Egg! If you are interested in Thai desserts, please follow my recipe. ;)
Ingredients :
• 1 coconut
• 1 Japanese sweet potato
• 200 grams of glutinous rice flour
• 8 pandan leaves
• 30 grams of pumpkin
• 4 drops of red food color
• 4 drops of purple food color
• 2 tablespoons of brown sugar
• 1 egg
Step 1 : Make fresh coconut milk!
Scrape coconut add into the blender, add 250 ml. Pour water and mix it together. Then, sieve the coconut to get the coconut milk.:)
Step 2 : Round small dumplings!
• I prepared the green color with green pandan mix with pure water 50ml. Then, mix it with 50 grams of glutinous rice flour.
•I got the yellow color from pumpkin, I boiled it and pounded it. Then, mix it with 50 grams of glutinous rice flour.
• I used red and purple food color and cooked it with 50 grams of glutinous rice flour.
• Then, made the round small dumplings. It looks sooo cute!!
Step 3 : Boil round small dumplings and Japanese sweet potato
• Boil water 500 ml of water, add Japanese sweet potato and cook it for 7 minutes. Remove them to a bowl.
• Add round small dumplings cook them for 10 minutes.
Step 4 : Cooking sweet coconut milk
• Set your pot on the medium heat add 200 ml ofcoconut milk. And brown sugar and boil it with green pandan leaves.
• Add egg into the sweet coconut milk, cook it for 1 minute and remove it to the bowl.
Last step: I used to cook the Japanese sweet potato and round small dumplings again in the coconut milk to make it creamy and more delicious!

We call this Thai dessert Bua Loy Khai Hwan in Thai! It's mean Sweet small dumplings with cocomut milk.
Most Thai desserts are cooked with coconut milk and you can use others ingredients, just like I cooked today, I wanted to try Japanese sweet potato in my new version of this dessert! It tastes sweet, very creamy and sooo delicious! I hope you will try this Thai dessert at your home. ;)
