Ribeye is my favorite so far!

Of all of the steaks I've tried lately, this ribeye was my favorite. I cooked this one mostly in a searing-hot cast iron skillet but finished it in a 300ºF oven for maybe 4 minutes until it was medium / medium-rare. I seasoned it with coarse Himalayan pink salt and black pepper and basted it with garlic butter during the pan cooking. I didn't get this one from Butcher Box this time, either. Just the regular supermarket! Shocking, huh?!

I can't agree with you more. Ribeye is my hands down my favorite cut of beef, above the filet and NY. I prefer it bone in though. The meat around the bone is so tasty. ribeye is the best, I cooked one yesterday that my wife said was the best steak she has ever eaten, and she didn't think she liked ribeye. Did you rest your steak before slicing it?

Yeah, I did. I let it get to room temperature before cooking it, too. It turned out great. I just want to get better at cooking them on the grill. I have better results on the stove, but it's nice outside this time of year, and I'd love to enjoy it. :)

The grill is the way to go for sure. the trick to doneness is poking it with your finger.

The problem I have with the grill is I can't get it charred on the outside like I like it. I think it's because my grill is actually too big. I'm going to look into getting a smaller, better, two-burner grill. I bought it when I was a vegan, and I cooked all sorts of vegetables on it. It worked for that. Now that I am basically only eating meat, I want a better grill. :)

my grill is pretty old and shitty, I crank it up to the max for a while to get it super hot then I throw the steaks on one side and then turn down those two knobs to low but leave the others on high.

Last time, I only turned on 2 of the 4 burners because the grill is big and I didn't want to waste propane. I think that was the issue. I'll have to try what you described next time. It'll probably get much hotter.

I think that's the trick, I let it heat up for like 10 minutes and I try to keep the lid closed as much as possible.

So far, I actually prefer the cast iron skillet / oven method, but I'm new to cooking steaks. I like it because I can really control how much I sear it on the outside.
