Day 1 of winning the battle of being over weight

My challenge is to eat healthy but still affordable and not spend the whole day in the kitchen preparing my meals. And to still enjoy it.

This healthy lifestyle will be banting with a twist.

With any healthy lifestyle you get sick because your body needs to get rid of all the toxins and is not use to all the health food.

The most important thing to remember is you need to drink enough fluids and get some extra salt during the first week, otherwise you will feel like you getting flu.

Breakfast will be nice and simple today

Breakfast: Bacon & Eggs

Scrambled eggs with full cream milk
Packet of Bacon
Avo

Lunch: Tuna salad

Tuna in water
Cherry tomatoes
And some home made mayonnaise
Lettuce
Paprika, salt and pepper to taste

Homemade mayonnaise is from Tim Noakes diet.

Ingredients

1 whole egg.

2 egg yolks.

1 tbsp Dijon mustard.

1 tbsp lemon juice.

½ cup of coconut oil.

½ cup olive oil.

1 tbsp greek yogurt.

¼ tsp of salt & pepper.

Preparation

Combine the eggs, mustard & lemon juice in a food processor

Melt the coconut oil just until it liquifies

Slowly pour the coconut & olive oil into the mixture in the food processor whilst increasing the processor’s speed

Once the mayo mixture has emulsified add the Greek yogurt, salt & pepper – actually you can add your own choice of seasoning & flavour combinations depending on your own taste preferences.

Pour the mayo into a jar and keep refrigerated

Your Banting mayo should be used within a week as it won’t keep for much longer than that.

Dinner- Pesto Chicken casserole with feta cheese and olives

Chicken thighs and breasts
Butter for trying
Basil pesto
Heavy whipping cream
Pitted olives
Feta cheese
Garlic
Salt and pepper
Rosemary

  1. Preheat oven to 180 degrees
  2. Season chicken with salt and pepper and fry in butter
  3. Mix pesto and cream in a bowl
  4. Place chicken in baking dish with olives, feta cheese and garlic.
  5. Bake for 20-30 min

I made enough for the next days lunch. So Wednesdays lunch is sorted.

I made a fresh salad to go with it.
