If we are thinking about RAMEN Noodle Soup, we are picturing fresh noodles in fish broth, in Dashi or Miso soup among other exotic mouth watering toppings.
I don't mind making mistakes by pulling and experimenting some ingredients that aren't supposed to be in the receipe, actually that's The Fun Part of cooking.
I just want to keep it as simple as possible with my thought in the plate today, baked stuffed chicken drumstick, shitakee mushroom and hard boil eggs are not too far from the original ramen.
The broth made from chicken bone, dried kombu, shitakee mushroom and slice of fresh ginger.
I first cook the chicken bone, dried mushroom (soaked) and fresh ginger with a small pinch of salt in slow cooker about 4 hours then add dried kombu for 5 minutes then strain it.
Baked Chicken drumstick, stuffed in fresh homemade chicken sausage.
Reboil or heat up the broth before serve, you can add some salt if you prefer but kombu is already packed with salt so I didn't.
The soup was astonishingly amazing, super light but but got the savory taste without losing the kombu flavor.
