I have been recovering from surgery and was told that chicken soup really helps with the healing process, apparently it doesn't just help to cure the common cold, but in helping the body heal in all sorts of ways.
During my recovery process we were quite lazy to cook, so often took the easy way out by buying cooked rotisserie chickens from the supermarket, and then serving it with veggies or making chicken-mayo sandwiches.
It just so happened that we had bought chickens on Monday night and Wednesday night, so I had the carcasses on hand.
It was the easiest dinner I have ever made :) I literally chucked the carcasses (with some meat left on) in my slow cooker, added some chicken stock and a packet of soup veggies that I had bought pre-cut. I added some salt and pepper and turned my slow cooker on. It cooked all night and the next morning it was ready. All the meat had fallen off the bone and the smell was glorious.
I loved how easy this was to prepare and how comforting and delicious it was.
Who knows, maybe there is truth to the old-wives' tale that chicken soup is a cure-all for everything? What do you think?
Soup is especially good during these cold winter months! Slow cookers are just the best way to cook aren't they. I do a delicious lamb and bean curry in mine.

as much as I love soup, my wife dislikes it. So when she makes it, I know who she made it for! I am a lucky fellow indeed.
I make at least one type of soup a week during winter. We are enjoying pea and bacon soup this week :) I find it ideal to take with to work for lunch. My slow cooker is my best friend.
