After a long break here on SteemIt, I am finally back with some wonderful recipes for the upcoming winter season. Please feel free to comment and share.
And here we go with our first winter recipe: a creamy butternut soup
Ingredients
2 onions
2 big potatoes (ca. 200gr)
1 butternut
1/3 fresh red chilly
Ginger
Salt
Pepper
Vegetable stock
1 tbsp. Coconut oil
Sunflower seed as topping
**Step-to-Step-Guide
- Chopp the onions and the pre-washed butternut and potatoes in little cubes.
- Put some coconut oil (1 tbsp.) into a hot pan and add firstly the onions and after 2 minutes the butternut cubes.
- Now add 1,5 liter water with the needed amount of vegetable stock to the pan. Let it cook for ca. 25 minutes.
- Afterwards season it with fresh chilly, pepper and a little bit of salt. And blend the soup till everything is mashed and the soup is creamy.
Finally add some sunflower seed. And your soup is ready. Enjoy!
Duration: ca. 30 Minutes
