Hi @birdsinparadise ! In my country, Venezuela, Yuca and Mango have two things in common: both are cheap and both are tropical vegetables so we eat a lot of both here. That's why I like your recipe so much. It is a very interesting idea and it looks delicious. I have not tried yuca with anything sweet, but I use it to cook salty dishes for lunch or dinner. My favorite recipe with mango is mango jelly. You just need green mangoes, I mean, still not mature. You cook the mangoes in water, then take out the pulp, and mix whith the same amount of sugar than pulp. Brown sugar or white, as you prefer. Then cook both until the mix is thick, about an hour. It is a very easy recipe, but requires permanent attention to the mix until it is thick. It is delicious!
