Ingredients
Olive oil (3-4 tablespoons)
Bitter gourd (3 medium)
Onion (chopped 1 medium)
Capsicum (1/2 yellow finely chopped)
Small Broccoli (finely chopped)
Tomato (finely chopped)
Brown Shagur (1/2 tsp)
Cinnamon Powder (a pinch)
Clove powder (a pinch)
Brasamic vinegar (few drops)
Cheese (50-60)
Spice Dust / Coating
Gram flour (2 1/2 tablespoons)
Cornflour (2 1/2 tablespoons)
Onion Powder (1 tsp)
Garlic Powder (1 tsp)
Cumin Powder (1 tsp)
Steps To Follow
Step 1: Peel the bitter gourd and cut it in half lengthwise, take out its seeds from inside.
Step 2: Sprinkle salt over them so that their moisture is removed.
Step 3: Let the bitter gourd get extra water and press it under something heavy for 3 to 4 or all night.
To prepare the filling:
Step 4: Heat 2 tablespoons oil in a pan and fry onion, bell paper, broccoli for 30 seconds.
Step 5: Add tomatoes, salt, badge leaves, cinnamon powder, clove powder, brown sugar, black vinegar and chili flakes.
Step 6: Take a portion of the mixture and spread it evenly on the pan. Let it cook. Cover with a lid for faster cooking.
To prepare Spice Dust:
Step 7: In a large dry plate, mix gram flour, corn flour, onion powder, garlic powder and cumin powder together.
To make bitter gourd:
Step 8: Fill half the bitter gourd with grated cheese.
Step 9: Close them well and roll them in Spice Dust.
Step 10 :Heat oil in a pan and fry the bitter gourds from both sides for 3 to 4 minutes.
Serve hot by slicing them.
