Thanks. Eggs are so delicious and nutritious!

I just made what has become my favourite omelette recently:

coconut or olive oil
a pinch of turmeric
3 eggs, beaten
green onions, chopped
salt and pepper

After heating the oil, add the turmeric and mix.
Then add the green onions and sauté lightly.
Finally, add the eggs and cook just until done.

Besides a deep yellow colour, the turmeric adds a rich, savoury taste. It's also got curcumin, which is a natural anti-inflammatory. I've moved away from the big omelettes that I used to make with lots of veggies, because the eggs cook up light and fluffy this way (with just green onions, or maybe parsley or herbs de Provence, sometimes).
