"Adai" - Indian Pancakes made with lentils

Adai is a healthy way of eating lentils in a snack form, typically for breakfast.  There can be many variations of this recipe. By adding green chilli, coriander and onion we can make it more flavoursome. You can have this  with ketchup. 


Ingredients:

1/2 cup whole green Mung beans (green gram)

1/2 cup yellow Mung beans

2 tbsp brown chickpeas and  black gram each

1 tbsp red gram

salt to taste

1 onion chopped

1 green chili chopped

few coriander leaves

1 tbsp coriander powder

1 tsp red chilli powder

oil for frying

Making:

Wash and sock lentils over night. In the morning grind it coarsely.Make it into a smooth batter. If it is too thick add some water to it. If by chance it becomes too thin add gram flour to it to adjust the thickness. Add onion, green chilli, coriander powder, red chilli powder, salt and coriander leaves to the batter. mix it well.

Heat a pan. Rub some oil on it and pour spoonful of mixture into the pan and spread it in a circular motion. So the shape becomes round.Cook till one side is cooked and is golden brown,repeat with other side. The heat should be on medium. To check if the one side is done it should turn over easily if it still sticks to the pan that means its not done.Make rest of the pancakes following the same steps and serve hot with chutney or with ketchup.
