I am rarely home, so I eat out a lot. Some of my friends doubt my ability to cook for myself, but surprise, surprise! I can cook too!
Spent the weekend at home so I dug around my grandma's kitchen and fridge. Found dried shrimps and I came up with this: Udang Kering Berlada (Spicy dried shrimp?)
Easy to prepare, but it's good if you like spicy food.
What you need:
300g dried shrimp
2 tbsp of seedless tamarind paste
2 shallots - medium sized, sliced
2 cloves of garlic, sliced
Bird eyes chilis according to your taste - sliced
2tbsp Sugar
Salt to taste
Cooking oil to stir-fry/ sautee shrimp, shallots and garlic
How:
- Wash and soak dried shrimp (30min), discard water
- Stir fry shrimp, remove, put aside
- Sautee sliced shallots and garlics until fragrant
- Mix in bird eyes chilis and sugar
- Add in dried shrimps and continue to stir fry
- Add in tamarind paste and about 1/4 cup of water
- Simmer until the sauce thickened to coat the shrimp
- Voilá! Serve hot and enjoy with rice
My style of cooking is more of a throw-whatever-in as I cook for myself most of the time, so do experiment with the dish to suit your tastebud.
