This is a dish that I made for my grandma today. Canton Fried Noodles, one of the most common food that you can get in the southern part of China.
It’s simple but delicious. Hence it’s one of the few dishes that people in China would learn at beginning level.
今天為婆婆做了三絲炒麪,簡單味美,她吃完一碟還說不夠。我沒有指定每種材料的份量,因為我相信中國菜的精深之處就是沒有的規則。它無邊界,就像藝術。如果你喜歡雞蛋的味道,你會加多些雞蛋。如果你不喜歡豆芽,你就放少一點。
Ingredients
- Egg noodles 炒麵餅
- Sliced pork 肉片
- Sliced Eggs 雞蛋
- Bean sprouts 芽菜
- Chinese leek (Chinese chives) 韮菜
- Leek sprout 韮黃
These are ingredients that I prepared for 3 people.
I didn't specify the exact amount of each ingredient because I believe the beauty of making Chinese food is you don't follow the rules. That are no boundaries, and it's like art. If you like the taste of egg, you'll add more eggs. If you don't like bean sprouts, you simply don't add it.
Procedures
Step 1: Marinade the pork with salt, pepper, sugar, soy sauce, corn flour and a little bit of oil. Let it sit for at least 15 minutes.
**Tips**
Adding a little bit of oil will make the meat more tender.
Adding corn flour will coat a protective shield on the meat surface to make it juicier.
Step 2: Boil the noodles for around 3-4 minutes, so they are al dente and still have some bite. Drain the noodle and let it dry.
Step 3: Cut Leek sprout and Chinese leek into equal length.
Step 4: Pan-fry the Bean sprouts for 1-2 minutes to remove the grassy smell and moist.
Step 5: Add a little oil and pan-fry the pork. Only turn meat once the bottom is brown. Don't overcook the pork as we will stir-fry it with the noodles later.
Step 6: Pan-fry the noodles for 2-3 minutes to make it slightly crispy. You don't have to add any oil if you are using a non-stick pan.
Step 7: Add the bean sprouts and stir-fry for an extra 30 seconds.
Step 8: Add the thicker greens into the pan first for one minute, then all other remaining ingredients.
Step 9: Carefully taste the noodles, swirl in some soy sauce. Taste it again, season lightly with salt and sugar if necessary.
