...This chicken and sweet potato coconut curry is

simple and very tasty.

This is a cheap and easy dish. You could add

chopped cauliflower, red pepper or aubergine

before the sweet potato and experiment with other flavours. All the flavour work well

together, and coconut milk add the creaminess

to the dish.

....Ingredients :

1 tsp of cumin

1 tsp of turmeric

1 tsp of chilly

1 tsp curry paste ( optional)

1 large chicken breast, cut into bite-size pieces

1 medium sweet potatoes, peeled and cut into

bite-size pieces

150ml OR 1 cup of chicken stock

200 ml OR 2 cups/ half a can of coconut milk

100g OR 1 cup of frozen peas

....Directions

Step 1 : Peel your sweet potato and cut into

cubes. Cut your chicken breast int cubes.

Step 2 : Heat the oil in a deep pan. Add the

chicken and spices, mix well together

Step 3 : Add sweet potatoes, and then pour in

the stock and coconut milk. Bring to the boil,

then simmer for 15-20 minutes.

Step 4 : Tip in the peas, bring back to the boil

and simmer for a further 4-5 minutes. Season to

taste before serving,
