I've been feeling under the weather lately, and woke up craving a hearty breakfast. This kind of cooking is fun, you basically use a frying pan to fry different ingredients back to back, then combine all at the end. Today I fried eggs, potatoes, with a bunch of other goodies. The green onions provide a prebiotic boost, while the sauerkraut and lebni provide the body with a wide range of probiotics. It's a complete meal, and I love eating it right out of the pan. You can play around with other ingredients, like cabbage, kimchi, spinach, kale, or any other goodies your body is craving that day. Cravings are a signal of what your body needs at that time, so pay attention to them :]

Tools:
- all-clad aluminum pan
- knife
- spoon or fork
ingredients
since you'll be frying these in stages, I organized the ingredients list by the order of frying, so you can prep the next ingredient while the previous one is cooking.
- 45g [3Tbsp] Ghee
- 60g [1/4] Potato
- 85g [1 Cup] Mushrooms
- 3 green onions
- 160g chorizo
- 6 egg yolks
- 30g [2Tbsp] Parmesan Cheese
- 30g [2Tbsp] Sauerkraut
- 17g [1tbsp] Ketchup
- 60g [4tbsp] Cultured Cream, I used Labne
- 15g [1/2 bunch] of Flat Leaf, aka Italian, Parsley
- 1 Lime
- sprinkles of pink Himalayan Salt
process
The prep time and cook time in this recipe are intertwined. Begin by melting the ghee until it sizzles
Meanwhile cut the potato into desired shape. You can do round circles or french fries like I did.
Drop the potatoes into the sizzling ghee and flip often until they brown, about 5 minutes.
Remove potatoes and set aside on a napkin, chop up the mushrooms and add to the frying pan.
Remove mushrooms and let rest on the paper napkin. Add the green onions to the frying pan until the edges begin to crisp, about three minutes.
Add the onions to the rest of the cooked veggies and sprinkle with a pinch of salt.
Now, add the chorizo and cook until it begins to crisp, about four minutes.
Reduce heat, and add the cheese and egg yolks. Turn off the heat and combine quickly as the yolks will cook quickly and you do not want overcooked yolks, unless you like the dry texture of them.
Combine the roasted veggies to the pan and add in the sauerkraut, ketchup, cream, and parsley.
Squeeze lime, mix it, pick at it, and I wish you enjoy this hearty meal.
