Salmon Croquettes/Patties & Grits
Another episode of keeping it real kitchen where we prepare Salmon Croquettes & Grits, and as always we kept it real!
P.S. The part of the video where I said we're OK after the grease splash is missing, but we're OK!
Salmon Croquettes/Patties
Ingredients:
1 14.75oz canned salmon
1 medium white onion
¼ cup of flour (some use cornmeal)
1 large egg
1 cup of vegetable oil
black pepper (to taste)
salt (to taste)
garlic powder (to taste)
onion powder (to taste)
Instructions:
Take the canned salmon and strain the liquid and add to a bowl. Remove the skin, spine, bones, and bloodline from the salmon.
Chop and dice a medium sized white onion.
Once the salmon is prepared, add the onions, flour, cracked egg, and spices then stir until well mixed. Take a scoop of salmon, roll the salmon into a ball, and then press to form patties.
Add the oil to a pan and preheat on medium-high heat. Once the oil is warm, carefully add the salmon patties to the oil. Cook salmon patties until one side is golden brown and crispy, flip and repeat.
Once the patties are finished cooking, remove them from the pan and strain the grease on a paper towel or cool rack. Let cool and enjoy!
Grits
Ingredients:
Instant Grits follow the measurements on the bag.
⅛ cup of butter.
Instructions:
Add some salt to the water then bring to a boil, add the grits, and then whisk until smooth. Return to a boil, cover and cook the amount of time specified per the instructions.
Once the grits are done, remove from the heat, add butter, and whisk until the butter is thoroughly mixed and the grits are smooth. Serve immediately.
